Apache is widely used for application deployment as it is open source and updates are more frequent.Also configurations like certificate deployments are pretty simple when compared to IIS.Overall Apache seems to have an upper hand.

Even when only taking your three requirements "stability, adaptability & simplicity" into account, just take the vast amount of resources for operating Apache web-server into account compared to IIS.
Nevertheless Nginx seems to overtake Apache already.
