Usually mundane can mean huge corporation.  I'm my experience a potential hire will want to know
1. Benefits - health insurance, retirement plan, work-from-home
2. Topic - e.g. they will be working cutting edge migration to get the mundane company onto the latest technology
3. Name recognition.  If they are currently working at a small company nobody has heard of they might want that brand recognition of a Dow 30 sized company.  Just keep in mind they likely won't stay long if this is a significant reason for joining.
4. International travel or assignments.  One of my favorite benefits is going to see the world.  I have been to a lot of countries I never would have traveled to if I was paying the bill.

Change the mission, as attract talent is only step 1, the harder step is retaining talent and a mundane mission will lead to more wasted time (talent leaves and restarting your search again).

Meaningful work and a career path.  Hard to explain meaningful when linked to a mundane mission, but just because the company has a mundane mission doesn't mean your department needs to.  Have a data mission and link opportunities to learn and use AI/ML and other advanced analytics for example.

One thing I do is include them in the meetings about the changes that will take place and get their opinion.  I also lay out the pros and cons of the changes and how it will effect us as a team moving forward.
