I really don't get this "fear" with cloud technologies. Find the right cloud provider, and a great partner for the implementation and support (size of partner should relate to the size of your business), and you shouldn't have any worries at all.
Always keep your eyes open on the latest cloud offerings from competitors, and even mix them up if you're that concerned. If you really have to, use a CSB (Cloud Service Broker) to help you.
