I'm looking for a chart that shows enterprise application sprawl over last 20-ish years. Has anyone seen a visualization of this or advice on where I could source relevant data?

I haven't seen anything like this but this question is a perfect candidate for a survey. Use something like qualtrics or survey monkey and send it out to the group. You could probably get some good insight from all the industry professionals commenting on it.

I would use a survey focusing on your industry and visualize it with a 3 dimensional diagram which shows cost, number of used applications and the year.
