Governance - Comprehensive AI Policy, Program, Risk Assessment process, Third party risk management
Mitigate risks - Ensure human-in-loop; Educate employees, KPI/KRI/KCI metrics/monitoring, tools/tech to mitigate risks.
Loss of IP data like codebase, statistics, presentations, white paper details, etc. An organization closely needs to evaluate the risks of these important pieces of information inadvertently getting leaked by employees while reviewing/improving those.
If the organization has an enterprise GPT license, none of the things you mention are risks, as you keep all such data in your instance. If not, you can contact OpenAI and ask to keep your content local and out of their training data just by making the request.

I feel the most impactful overall risk is the same as a lot of emerging technologies that aggerate data - Data Governance. The key is to protect against non-malicious data leakages or unauthorized exposures. The main risk to a human is impact from an undetected bias or failed safety control.
