I will post a controversial answer. GenAI is evolving so rapidly, with the modern version (and the attractive at the moment version) only a year old, so how could the definitive book be yet written and published. I would look for books that are more historical in nature - such as Isaac Isomov's The Robots of dawn. Learn about what not to do, and what to watch out for as you go forward in your necessary AI journey.
The tech is evolving so quickly that maybe the only reliable reflection platform is a classical book. Blade Runner is a great film, but I remember before the film reading the novel "Do Androids Dream of Electric Sheep?" by Philip K. Dick
